This prevents the dish from becoming too moist and losing its crispness. The nice thing about a roasting pan is that you use it on the gas stove, in the oven, and even on induction. For example, you sear the meat first and then place the roasting pan in the oven to continue cooking the meat slowly. When choosing a new roasting pan, take the size of your oven into account.
