Choose setting
How hot a ceramic cooktop gets depends on the setting you choose. A high setting equals high heat on a gas stove. You can choose the right setting with the touch buttons on the cooktop. These also allow you to set the cooking zone you want to use. Some freestanding ceramic cooktops have dials to select the setting. That feels a little bit more like cooking with gas.
Hot cooking zones
With a ceramic cooktop, the cooking zones heat up slowly thanks to a number of electric heating elements. The zones turn red when they're hot. They also cool down slowly. Keep that in mind when you bring a pot of water to a boil. It could take a while for the temperature to drop, so it's best to take the pot off the cooking zone if you think it's going to boil over. The cooking zones stay hot for a while after you're done.
Your own pans
The advantage of a ceramic cooktop is that you don't have to buy new pans. Because the cooktop heats up by itself, it doesn't matter what kind of bottom the pan has. It's also not a problem if you've used the pans on a gas stove before this. Though it might have a slight bulge, the bottom of the pan still gets hot enough to cook with.
